Minty Egg Korma is a quick Indian recipe made with boiled eggs, flavored with mint and roasted spices, cashew and coconut. Adding mint to this curry gives a nice aroma to the curry. There are many other versions of making Egg curry. But amongst all, I like the egg korma recipe very much. My family loved this curry very much.
Just about one month back, suddenly we got a call from one of our relatives saying they would visit our house. Since they were coming around lunch time, my in-laws asked me to prepare something special for the lunch. I had no clue what special to make since I was not prepared for it. My visitors were non vegetarians and since it was not possible to go and get chicken or, any other meats (anyways I am a poor cook of non-vegetarian). 🙂 The only option I had was to make something out of the eggs lying in my refrigerator.
If your next question is on what I served along with egg korma then the menu was as follows: Minty soya chunks pulao, chole, puri and potato raita and semiya kheer.
If you have visitors at home, It is good to have a nice menu like this.
