Spinach Gravy With Cottage Cheese

Ingredients
Fresh Spinach/Palak Leaves - 3 bunch
cleaned and washed
Cottage Cheese/ Paneer - 300 grams
Garlic - 2 cloves
finely chopped
Onion - 1
finely chopped
Ginger - 1/2 inch
Tomato - 2
roughly chopped
Green Chilies - 3 - 4
Cumin Seeds - a pinch
Whole Red Chilli - 2
Cinnamon stick - 1 small piece
Turmeric Powder - 1/3 tsp
Salt - to taste
Butter - 2 tablespoon + little extra
Whipped Cream - 2 tablespoon
Instructions
Add spinach in a pan or kadhai and let it cook uncovered on a medium flame.Let it cool down.
Once it gets cold put the leaves in a blender, make a fine and smooth puree and keep it aside.
Now in the same blender add tomatoes, ginger and green chilli and make a fine paste. Set aside.
Now heat butter in a kadhai.
Add cumin seeds and let it splutter.
Once the seeds starts spluttering add cinnamon stick and whole red chilli and saute for few seconds.
Add chopped garlic to it, saute for few seconds.
Now add onion, turmeric powder and salt. Saute until golden brown.
Add tomato paste to it and fry for few minutes..
Now add spinach puree to it and let it simmer for few minutes.
Add cottage cheese and mix it well.Let it simmer for few more minutes and switch off the stove.
Add dollops of butter and whipped cream to it.
So the yummy palak paneer is ready to serve now.
You can serve it along with cauliflower rice or with a low-carb naan bread.
