Minty Egg Korma Recipe

Minty Egg Korma is a quick Indian recipe made with boiled eggs, flavored with mint and roasted spices, cashew and coconut. Adding mint to this curry gives a nice aroma to the curry. There are many other versions of making Egg curry. But amongst all, I like the egg korma recipe very much. My family loved this curry very much.

Just about one month back, suddenly we got a call from one of our relatives saying they would visit our house. Since they were coming around lunch time, my in-laws asked me to prepare something special for the lunch. I had no clue what special to make since I was not prepared for it. My visitors were non vegetarians and since it was not possible to go and get chicken or, any other meats (anyways I am a poor cook of non-vegetarian). 🙂 The only option I had was to make something out of the eggs lying in my refrigerator.

Minty Egg Kurma Recipe

Minty Egg Kurma Recipe


  • Boiled Egg - 6
  • Onions - 2 (thinly sliced)
  • Ginger-Garlic Paste - 1 tsp
  • Tomato - 1 large (finely chopped)
  • Coriander powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Red chilli Powder - 1 tsp
  • Curry leaves - a few
  • Fresh mint leaves - 11-12
  • Oil - 2 tbsp
  • Chopped coriander leaves - 2 tbsp
  • Salt - as per the taste
  • Ingredients to Grind
  • Saunf - 3/4 tsp
  • Cinnamon - 1" inch
  • Cardamom - 1 piece
  • Cloves - 2
  • Khus khus - 1 tsp
  • Fresh Coconut - 6 tbsp (grated)
  • Cashew - 6


  1. Dry roast saunf, khus khus, cinnamon, cardamom, cloves, grated coconut and cashew nuts and set aside.
  2. Let it cool down.
  3. Now grind the roasted items together by adding little water to it and set aside.
  4. Slit the eggs partially on all the four sides and set aside.
  5. Heat oil in a heavy bottomed vessel, slightly fry eggs, three at a time. (If you want you can also use non-fried eggs).
  6. Remove the eggs in the plate.
  7. Now in the same vessel add chopped onions, turmeric, salt and fry till brown.
  8. Add ginger-garlic paste and saute till the raw smell goes off.
  9. Now add mint leaves and saute for 2-3 minutes.
  10. Add curry leaves, red chilli powder, Coriander powder and mix well.
  11. Add the chopped tomatoes and fry for about 5-6 minutes.
  12. Now add the ground paste and cook for 9-10 minutes,stirring in between.
  13. Add the boiled eggs or the fried eggs and mix. Cook uncovered for 3-4 minutes.
  14. Add water as per required and let it boil till the gravy thickens.
  15. Add chopped coriander leaves and switch off the flame.
  16. This can be served with plain rice, jeera rice, pulao, biryani, rotis, puri, paratha, parotta etc.
