aloo bhindi  fryThere are many ways of making aloo bhindi ki sabzi. Simple aloo bhindi fry recipe is an easy recipe to make.It goes well with roti, plain rice and dal.

Ingredients :-

  • Potatoes – 2 medium (you can use boiled potato as well)
  • Bhindi – 250 gm
  • Red chilli powder – 3/4 tsp
  • Turmeric powder – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Dry mango powder (amchur) – 1/4 tsp
  • Cooking Oil – 4 tbsp
  • Salt to taste

  • Rinse and dry the bhindi/okra with a kitchen towel or  you can also let them dry naturally.
  • Cut the bhindi into 1 inch pieces.

  • Peel potatoes and make small pieces of it and keep it aside.
  • Heat oil in a pan and add chopped potatoes, salt and turmeric powder.

  • Fry continue on a medium flame, till potatoes are evenly little browned.
  • Remove from the pan and keep aside.
  • Now in the same oil add cumin seeds, when the seeds splutter add  bhindi and keep frying uncovered  till it turns crispy and water is completely evaporated.
  • When the bhindi is almost done, add fried potatoes and mix well.
  • Add amchur powder and chilli powder and mix well.
  • Stir gently till the whole masala mixture coats both the aloo and bhindi.Saute till the oil starts to leaves the sides of the mixture.
  • Switch off the gas.
  • Serve with rice-dal, roti and paratha.
