overripe Banana

Whole Wheat Flour

Coconut
grated

Jaggery Powder
or add as required

Ghee/Oil

Instructions
Peel bananas and place them in a mixing bowl.
Now mash bananas with a masher or with your hand.
Add jaggery powder and give it a nice mix. (You can add jaggery as per your taste)
Now add wheat flour, grated coconut, and milk to it.
Mix everything well, you can add more or less milk as per the requirement.
Mix everything well and make a smooth batter without lumps. The batter has to be like a dosa batter and have a medium consistency.
Now heat a pan and spread a bit of oil on the pan. (You can use non-stick or cast iron pan)
Keep the flame to a low and pour a spoonful of the batter on the pan and then gently spread it. (just make small pancakes do not spread too much)
Now cook the pancake on a low flame.
Drizzle some ghee or oil on the sides and top.
When the base gets golden and slightly crisp, turn over the banana pancakes.
Cook the other side also until it gets golden.
You can cook by flipping once or twice the way you cook paratha.
Once it gets cook properly take it out on a plate and serve.
Drizzle some honey on top and serve.
