Ammini kozhukattai Recipe

Ammini kozhukattai is a healthy breakfast recipe made with rice flour tempered with some Indian spices and aromatic curry leaves. Ammini Kozhukattai is a great tea time snack and can also be packed for kids lunch box.

Ingredients

For Dough

  • 1 cup Rice Flour homemade preferably or use store-bought idiyappam flour
  • 1/2 tsp Salt
  • 1 3/4 cup Water
  • 1 tbsp Oil

For Tempering:

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tbsp Urad Dal
  • 2 nos Dry Red Chilli broken into small pieces
  • 4 nos Green Chilli finely chopped
  • 1/2 tsp Asafoetida optional
  • Curry Leaves a sprig
  • 1/2 cup Fresh Coconut grated
  • Coriander Leaves to garnish

Instructions

  1. Bring water to a boil in a pan.
  2. Once it starts boiling, take it off the heat and add in salt and oil.
  3. Now add rice flour to it and mix well. Cover and let it cool down.
  4. Once it gets cool, gently knead with oiled hands and make small balls out of it.
  5. Place the balls in an oiled steaming plate and place it in a steamer and steam cook for about 10 minutes till glossy.
  6. Once done remove it from the fire and let it cool down.
  7. Heat oil in a kadai.
  8. Add mustard seeds to it and let it crackle.
  9. Now add urad dal to it and allow the dals to turn red.
  10. Add curry leaves, dry red chilli, asafoetida and green chilli to it and fry for a few seconds.
  11. Now add steamed rice flour balls in the tempering and some salt to it. Mix well.
  12. Add grated coconut and give it a nice stir.
  13. Garnish with some chopped coriander leaves and serve.

Recipe Notes

Do not overcook the rice flour balls, else they will turn rubbery.

We can use coconut oil, gingelly oil or any vegetable oil to make this recipe.
