  • 1 cup Whole Wheat Flour
  • 3/4 cup Semolina sooji
  • 1 tsp Cinnamon Powder
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 cup Curd
  • 1 cup Sugar
  • 100 gm Oil
  • 1 tsp Vanilla Essence
  • 75 gm Cashew
  • 75 gm Raisins
  • 75 gm Dates
  • 75 gm Almonds

  1. Soak all the dry fruits overnight.
  2. Drain the excess water and coarsely grind the dry fruits and set aside.
  3. Take a 5-liter pressure cooker. (It's better to use the big size of the cooker in order to bake without any hassle)
  4. Use the cooker plate to keep the distance between the baking tray and the cooker base.
  5. This will help keep the baking tray away from the direct heat and the cake will not get burnt from the base.
  6. Now keep the cooker plate in the cooker ensuring it doesn't touch anywhere in the cooker.
  7. Close the cooker lid, switch on the stove and preheat the cooker for about 6-7 minutes.
  8. By the time you are preheating the cooker.
  9. Take a bowl, add wheat flour, sooji, baking powder, baking soda, cinnamon powder and fold well. Set aside.
  10. Take another bowl, add curd, sugar, vanilla essence, vegetable oil and coarsely ground dry fruits and fold gently.
  11. Now add the dry ingredients to these wet ingredients and mix everything well. ( Do not over mix)
  12. Now grease the cake tin with oil on all the sides. Dust it with wheat flour and sift to ensure uniform distribution of the flour.
  13. Shake and tap the tin onto the plate to remove the excess flour.
  14. Pour the prepared cake batter into the greased and dusted tin and spread it evenly.
  15. Top it up with some more chopped dry fruits.
  16. The pressure cooker must have been heated by now.
  17. Open the lid of the pressure cooker, place the baking tray on the cooker plate. Cover it with a lid without the ring and whistle.
  18. Now bake in a preheated pressure cooker on low flame for 40 to 45 minutes.
  19. After 40 to 45 minutes of baking, open the cooker lid.
  20. Take a toothpick and check if the cake is baked.
  21. You can just poke toothpick at the center of the cake. If it comes out clean, then your cake is ready.
  22. And if not, you need to bake it for another 5-6 more minutes.
  23. Separate the cake from the baking tin using a knife.
  24. Now, take a plate. Cover it on top of the baking tin and flip it over, gently tap on top so that the cake is released.
  25. Turn it upside down again.
