Ingredients
2cupChura/ flattened rice
1nosCauliflower
1nosOnionthinly sliced
1nosPotatothinly sliced
1/2cupGreen Peas
2-3Whole Dry Red Chillibroken
1/2tspCumin Seeds
4-5tbspMustard Oil/ Vegetable Oil

Instructions
Heat 2 tbsp oil in a heavy bottom pan.
Add cumin seeds and whole dry red chili. Saute them until they crackle.
Now, add onion to it and saute until golden brown.
Now add cauliflower, potato, and peas to it.
Add turmeric and salt, and give it a nice mix.
Cover and cook on a low flame stirring in between.
Once the vegetables are cooked well, take them out in a plate and set them aside.
Now in the same pan add oil.
Once the oil is hot add flattened rice.
Stir immediately so that the chura absorbs the oil evenly.
Add salt to taste and give it a nice mix.
Keep stirring the chura until it gets fried properly.
Take the pan off the heat when the chura begins to turn golden.
Add the cooked veggies and mix well to blend the ingredients well with each other. Transfer to a bowl and serve immediately.
Notes
You may sprinkle little black salt to enhance the taste.Serve chura bhuja instantly otherwise the poha will be soft and chewy.
