For Dough
3 1/2cupMaida
3 1/2tspYeast
3/4cupMilk
1tbspMilk Powder
1tbspSugar
2tspSalt
Wateras required or approx 1 cup
For Stuffing
1cupGreen Bell Pepperchopped
1cupCarrotchopped
1cupCornboiled
Chilli Flakesto taste

Instructions
Kneading the dough:
In a bowl, add the hot milk and sugar and mix it well. Let it cool down a little until it is warm enough to dip your hand in.
Now add the yeast and gently mix it. Let it stay for a few minutes for the yeast to proof. (If you are using Instant yeast, you can directly mix it into the dough and can skip this step)
When the yeast proofs, add the all purpose flour, salt and milk powder and mix everything well.
Now add water and mix the dough. Add as much water as is required to make a sticky stretchy mixture out of the dough.
Now transfer the dough to a platform and start kneading it. The process of kneading is very important. Knead and stretch the dough and beat it in between.
Keep kneading for about 10-12 minutes until you see that gluten is formed and that the dough is stretching.
Now add about 2-3 tbsp of butter and knead it once again for another 5 minutes.
The dough would have become nice and soft and the stickiness would have gone by now.
Grease a bowl with butter.
Then fold the dough inwards at the bottom and place it inside the bowl. Cover it and let it rest for about an hour.
Making the mixture:
In a pan add some butter. Now add the chopped vegetables to it and salt as required. Remember not to add a lot of salt if you are using salted butter and cheese.
Saute the mixture until it is 25% cooked. When cooking just ensure that the crunchiness of the veggies is retained.
Sprinkle some oregano and chilli flakes and you mixture is ready.
Set it aside.
Making the buns:
After an hour, you will see that the dough has risen to about 2-3 times of the original.
Take the lid off and punch the dough so that the air bubbles are released.
Now knead the dough once again for a minute.
On the platform sprinkle some maize flour and knead the dough once again in it for about a minute.
Now cut the dough into 6 equal parts. Fold the dough inwards at the bottom and make it a ball and place it on top of some sprinkled maize flour.
Take a ball and roll it slightly like a puri or, chappati to about 5 inches in diameter.
Now place a slice of cheese and about 2 tbsps of the vegetable mix in between.
Fold the base from all the sides towards the top like you would do in the case of a modak, and squeeze the centre firmly.
Then, gently roll it with your palms to form a ball.
Do the same with all the remaining portions.
Now grease a pizza tray with butter and place each of the balls on it.
Brush the top of the balls with milk or, butter
Grate some mozzarella cheese on top of each of the buns.
Cover the tray and set it aside for another 15 minutes.
Preheat an oven at 250 degrees for about 10 minutes.
In the meantime you can open the lid of the tray. You will notice that the buns have slightly increased in size.
Place the tray in the over and cook for about 12-13 minutes at 250 degrees.
You will see that the top of the buns have slightly browned.
Take the tray out.
You vegetable stuffed cheese bun is ready to be served.
Spread some oregano and chilli flakes and serve it along with mayonnaise.
