Eggless Pressure Cooker Tutti Frutti Muffins Recipe

Ingredients
Mixture 1:
Maida - 3/4 cup
Baking Powder - 1/2 tsp
Tutti Frutti - 1/4 cup
Salt - a tiny pinch
Mixture 2:
Sugar - 1/3 cup
Oil - 1/8 cup + 1 tbsp
Vanilla Essense - 1/2 tsp
Water - 1/4 cup
Mixture 3:
Thick Curd - 1/4 cup
Vinegar - 1/2 tbsp
Baking Soda - 1/4 tsp
Instructions
Start by heating up a pressure cooker covered in medium flame, keep the perforated plate. Remove the whistle and rubber and let it preheat for 10 minutes.
Add sugar, oil, vanilla essence and water in a mixing bowl and whisk it well.
Toss tutti frutti with a tsp of maida and set aside.
Sieve maida,baking powder and salt and take it in a bowl.
Reserve a tbsp of tutti frutti and add the rest to the mixture and mix well.

Now take curd in a bowl add baking soda and vinegar to it and mix well.
Now add mix 1 and mix 3 to mix 2 and whisk it well.
Line cupcake liners in a baking tray / muffin pan.Scoop out the batter and fill the cupcake liner upto 3/4th.Then add reserved tutti frutti on top.
Open the cooker and place the muffin tins inside, do not over load 3-4 at once. Quickly close and turn the flame down to low-medium and let it bake for 15-18 minutes.
Once done, test with a toothpick, if it comes out clean its ready. Take it down to a cooling rack. Let them cool and enjoy anytime in the day!
