Carrot Beans Thoran Recipe – Carrot Beans Stir Fry Recipe

Ingredients
Carrot - 1/2 cup
chopped
Beans - 1/2 cup
chopped
Green chillies - 2-3
Garlic - 4-5 pods
roughly crushed
Grated coconut - 1/4 cup
Mustard Seed - 1/2 tsp
Curry leaves - a few
Urad Dal - 1/4 tsp
optional
Coconut Oil - 2 tbsp
Turmeric powder - 1/4 tsp
Salt - to taste
Instructions
Heat oil in a pan.
When its hot, add the mustards and urad dal.
When the mustard seeds starts spluttiring.
Add curry leaves and fry for few seconds.
Now add chopped carrot, beans, green chilli and mix well.
Cover the vessel and cook until done.
In the meanwhile in a plate add grated coconut, crushed garlic, turmeric powder, salt and red chilli powder. Mix everything well with your hand.
Once the beans and carrot are cooked, add the coconut mixture to it and mix well.
Reduce the flame to low and cook for few more minutes stirring in between.
Once done switch off the gas.
Serve hot along with rice and curry.
