Gajar Ka Halwa or Carrot Halwa is a traditional Indian dessert or sweet dish made with fresh red carrots, milk, ghee, sugar, and some dry fruits.

Ingredients
5cupsTender Juicy Red Carrotgrated
5tbspGhee
5cupsMilkfull cream milk
7-8nosCardamompowdered
10tbspSugar

20-25nosWhole Cashew
15-20nosAlmondchopped or sliced
Instructions
First of all, rinse, peel and then grate the carrots with a grater.
Now add ghee in a heavy bottomed pan or kadhai.
Add carrot to it and give it a nice stir.
Immediately add milk to it and let this mixture boil on a medium flame.
Now keep the flame low and let it simmer stirring in between.
Let the grated carrot cook in the milk.
Once you see that the milk started reducing and evaporated leaving behind thick khoya.
Add sugar to it.
Stir well and continue to cook stirring in between, till the sugar is absorbed and halwa becomes dry again.
Now it's time to add cashews, almond, raisins and cardamom powder and give everything a nice mix.
You will see that the halwa starts to leave the side of the frying pan.
Turn of the gas.
You can serve this halwa hot or cold depends on you.
Notes
Avoid frying carrot in ghee. It changes their color and makes the halwa black. If you want you can add the ghee later.Grate the carrots to medium thickness.Prefer using red carrots to make this halwa. These carrots are available only in winters and you get the real taste of when you use red carrots to make it.
