2 1/2cupsThick Pohabeaten rice
4nosOnionmedium size (finely chopped)
5-6nosGreen Chilli(finely chopped)
1/2cupCoriander Leavesfinely chopped
1/2cupFresh Coconutgrated
4-5tbspRaw Peanuts
1noLemoncut into halves
1tspMustard Seeds
1tspCumin Seeds
Curry Leavesfew
1/2tspAsafoetida
1tspTurmeric Powder
1tspSugar
Saltto taste

Instructions
First of all, take a strainer, add poha into it and wash poha twice and set it aside for about 5-10 minutes and let the water drain out completely.
Heat oil in a kadhai.
Add mustard and cumin seeds, let them splutter.
Add curry leaves to it and fry for few seconds.
Add peanuts and fry until light brown.
Now add onion to it and saute until translucent.
Add turmeric powder and asafoetida, saute well.
Now add soaked poha to it and mix well. Keep the flame low.
Add salt and give it a nice mix.
Add sugar and fresh lemon juice and mix everything well.
Cover and cook for 3-4 minutes or until it gets steamed well.
Switch off the gas, remove the cover, add freshly grated coconut and coriander leaves and mix.
So the Kanda Poha is ready to be served now.
Notes
Do not wash poha many times as it turns out soggy. After washing strain out the water completely from the poha. Addition of sugar is optional, in Maharashtra sugar is added in traditional poha recipe. Addition of sugar gives this recipe really a nice taste. Do not use thin poha to make this recipe, instead pick thick poha. Serve immediately once it is prepared, it turns out to be dry and does not tastes good.
