CheeraRed spinach - 3 bunch (I have added some green spinach as well and its optional)
Coconutgrated - 1 cup
Turmeric powder - 1/4 tsp.
Green chilli - 3
Riceboiled rice or raw rice - 1 tsp.
Red chillibroken - 4
Mustard seeds - 1 tsp
Curry leaves - few
Salt - as per the tastes
Oil - 2 tsp
Instructions
Wash red spinach properly.
Chop the spinach finely.
Now heat oil in a pan.
Add mustard seeds.
When the seeds starts spluttering add raw rice, few curry leaves and red chilli.
Add chopped red spinach leaves,turmeric powder and salt. Stir.
Grind the coconut and green chilly coarsely and keep it aside.
When spinach (cheera) gets cooked add the ground mixture and mix well.
Cook in a medium or low flame until it gets dry completely. (stir in between)
Serve hot along with rice as a side dish.
Notes
Traditionally people uses Puzhukkalari (boiled rice) for cheere thoran, but if you wish you can also use raw rice.
Do not overcook, it is advisable to cook uncovered as leafy vegetables does not take much time to get cooked.
