Vegetable stew is a healthy flavorful mixed vegetable curry, popular in Kerala. This recipe goes really well along with Gothambu puttu, Appam, and Idiyappam.

Ingredients
3tbspCoconut oil
2nosBay leaf
2-3inchCinnamon stick
4nosGreen Cardamom
5-6Cloves
1Onionthinly sliced
1tspGingercrushed
2cupsPotatodiced
1cupBeanscut in 1-inch size
1cupCarrotdiced
Saltto taste
4nosGreen chilislited
Curry leavesfew
1tspPepper powder
2cupsMilkyou can add a little more if you want
Instructions
Heat coconut oil in a pan.
Once the oil is hot, add cardamom, cloves, cinnamon, and bay leaf.
Fry for a few seconds.
Add onion and fry until they turn translucent.
Add crushed ginger and fry for a few seconds.
Now add potato, beans, and carrot one by one.
Add salt to taste. Mix well.
Cover and cook, stirring in between.
Once the vegetables are half cooked, add curry leaves and green chili.
Now cover again and cook the vegetables.
Remove the lid now.
Add pepper powder and give it a nice stir. Fry for a minute or two.
Now switch off the stove and let the mixture cool down a bit.
After about 5 minutes add milk to it. Mix well again.
Switch on the gas now, and stir the mixture well.
Cover the mixture and cook for 10-15 minutes on a slow flame. (stirring in between)
Now open the lid and add 1 tbsp of coconut oil. Mix and cook for another 5 minutes.
Now switch off the gas.
So the stew is ready to be served.
It goes well along with wheat puttu, idiyappam, nool appam.
