Vegetable stew or, ishtu is a simple south Indian curry made with lots of vegetables. It’s a highly nutritious, comforting, and all the more delicious recipe that you can make to delight your family.

This recipe is customizable, which basically means you can use more vegetables of your choice if you want. Like you can use cauliflower, green peas, and some chopped beetroot too.

You can even make this with just potatoes, in case the other vegetables are not available.

Usually, this recipe is made with fresh coconut milk.

If you want you can use fresh homemade coconut milk that can be made at home with freshly grated coconut. Or you can use the store-bought thick coconut milk and you can add water as needed to the curry. But I know that it’s a little tough job to extract milk from coconut and time-consuming too.

And knowing all the busy moms out there who are trying to spend as less time as possible in their kitchens, without compromising on the taste of food, I thought of making the same recipe with normal milk, and guess what. It came out really well. The taste was simply awesome. You must try this vegetable stew recipe, I m sure you would love this recipe.

Basic Ingredients Used to Make this Recipe:

To make Kerala style vegetable stew, you would be needing some basic ingredients, easily available in your kitchen.

Vegetables: I have used vegetables like potatoes, onions, beans, and carrots here. You can add on more vegetables like cauliflower, green peas, and beetroot too. Or you can just use potato and onion in case of the unavailability of green veggies.

Whole Spices: This recipe calls for a few whole spices like bay leaf, cinnamon stick, green cardamom, and cloves. Do not compromise on these spices as these spices bring on a wonderful flavor in the stew.

Pepper Powder: You should not forget to add pepper powder, in case you don’t have pepper powder, simply crush the whole pepper and add it to this curry.

Ginger: Yes, do add ginger to this curry you would love the taste of it.

Green Chilli: Add green chilli as per your taste.

Coconut Oil: Coconut oil is a must for this recipe to get a real authentic taste of Kerala.

Curry Leaves: Curry leaves are another key ingredient as you would know that any South Indian dishes are incomplete without curry leaves.

Milk: As we discussed that this curry is usually made with coconut milk. But today I am using the normal milk. So you would definitely be needing this to make this recipe.

Salt: of course, something without which we cannot get the taste, no matter how many other ingredients you are using. 🙂

Ingredients

  • 3 tbsp Coconut oil
  • 2 nos Bay leaf
  • 2-3 inch Cinnamon stick
  • 4 nos Green Cardamom
  • 5-6 Cloves
  • 1 Onion thinly sliced
  • 1 tsp Ginger crushed
  • 2 cups Potato diced
  • 1 cup Beans cut in 1-inch size
  • 1 cup Carrot diced
  • Salt to taste
  • 4 nos Green chili slited
  • Curry leaves few
  • 1 tsp Pepper powder
  • 2 cups Milk you can add a little more if you want

Instructions

  • Heat coconut oil in a pan.

  • Once the oil is hot, add cardamom, cloves, cinnamon, and bay leaf.
  • Fry for a few seconds.
  • Add onion and fry until they turn translucent.

  • Add crushed ginger and fry for a few seconds.
  • Now add potato, beans, and carrot one by one.

  • Add salt to taste. Mix well.

  • Cover and cook, stirring in between.
  • Once the vegetables are half cooked, add curry leaves and green chili.
  • Now cover again and cook the vegetables.
  • Remove the lid now.
  • Add pepper powder and give it a nice stir. Fry for a minute or two.

  • Now switch off the stove and let the mixture cool down a bit.
  • After about 5 minutes add milk to it. Mix well again.
  • Switch on the gas now, and stir the mixture well.
  • Cover the mixture and cook for 10-15 minutes on a slow flame. (stirring in between)
  • Now open the lid and add 1 tbsp of coconut oil. Mix and cook for another 5 minutes.
  • Now switch off the gas.
  • So the stew is ready to be served.
  • It goes well along with wheat puttu, idiyappam, nool appam.
