Ingredients
Whole wheat flour - 3 cups + for dusting
Cauliflower - 1 mediumgrated
Fresh coriander leaves - 1 small bunchfinely chopped
Green chillies - 3finaly chopped
Garam masala powder - 1 tsp oras per required
Ginger - 1/2 inchgrated
Red chilli powder - 1/2 tsp
Ghee - 2 tbspto mix dough
Oil - for shallow frying
Salt to taste
Water - to knead dough
Instructions
In a medium bowl add wheat flour, salt and ghee.
Knead the wheat flour with water to a smooth dough. cover and set aside.
Take a bowl, add the grated cauliflower, chopped green chilies, garam masala, ginger, red chilli powder and salt.
Mix everything well and keep it aside.
Take a medium sized ball from the dough.
Using the palm and your fingers press and spread the dough into a small round shaped puri.
Add a few tablespoons of the grated gobi/cauliflower mix in the center and then close and seal it gently by pressing the edges together. (Ensure that not to overstuff the paratha and it doesn,t tear in between)
Now gently roll the stuffed parathas to a size of a chapati or roti. (take care that the filling does not ooze out or tears the dough)
Now heat tawa and roast the gobi paratha with oil until golden brown on both sides.
Serve gobi paratha hot along with yogurt(curd), pickle, raita or white butter.
