Aloo methi is a classic Indian side dish recipe. It's a combination of potatoes and green methi leaves. This recipe is very simple and easy to make as it takes very little time to prepare.

Ingredients
3-4nosPotatomedium, peeled and cut into small pieces
500 gmMethi leavescleaned and washed
2nosWhole Dry Red Chilli
1/2tspTurmeric Powder
1tbspRed Chilli Powder
10podsGarlicfinely chopped
1/2tspPanch Phoran
3-4tbspMustard Oil

Instructions
Chop fenugreek leaves and set them aside.
Heat oil in a pan add panch phoran, when splutters add chopped garlic and red chili.
Add potatoes, salt, turmeric, and red chili powder.(cover and cook until the potatoes are tender and cooked)
Now add chopped methi leave and stir-fry for about 5-6 minutes, stirring in between, on high heat, or until the leaves shrink.
Once done switch off the gas.
Serve hot with roti, paratha, and puri.
Notes
Use only the leaves and not the stalks as they taste bitter.Don't add water while making this aloo methi as it's not needed.You can add more or less amount of leaves as per your taste.If you do not have fresh methi leaves, you can use dry kasuri methi, but the flavor will be different. But the tastes will be different altogether.You can also add a pinch of hing.
