Besan bread toast, also called bread chilla, is a quick Indian breakfast made by dipping bread in a spiced gram flour and paneer batter, then toasting until golden and crisp on a tawa.
In a large mixing bowl, combine the besan, chopped carrot, onions, tomatoes, crushed corn, green chilies, grated paneer, crushed garlic, coriander leaves, turmeric, garam masala, black pepper, salt, and hing.
Add water gradually and whisk until you get a smooth, medium-thick batter, similar to a pancake batter. It should coat the back of a spoon without running off.
Dip each bread slice into the batter, making sure both sides are coated evenly. Do not let the bread sit in the batter too long.
Heat a tawa or a flat griddle on medium flame and drizzle a little oil across the surface. Place the batter-coated bread on the hot tawa.
Drizzle a little more oil around the edges and let it cook for two to three minutes, until the underside turns golden brown. Flip and toast the other side the same way.
Transfer to a plate and serve immediately with green chutney, ketchup, or a hot cup of chai.
Notes
Keep the batter medium-thick, not watery, for the best texture.A thin batter makes the bread soggy and takes longer to cook.Bread that is a day old holds its shape in the batter better than very fresh bread.Serve immediately for the crispest bite, this toast softens as it sits.
