Instructions
Cake Preparation:
In a bowl, add curd, sugar, vanilla essence, lemon juice, and water.
Mix well until the sugar dissolves completely and the mixture looks smooth.
Add baking soda to the wet ingredients and stir gently.
You’ll notice the mixture fizz as the lemon juice activates the baking soda, helping the cake rise.
Sift together all-purpose flour and baking powder directly into the wet mixture.
Fold the mixture gently using a spatula or whisk, ensuring there are no lumps. Be careful not to overmix.
Preheat your oven to 180°C (356°F) for 20 minutes.
Grease the baking tin, sprinkle some flour, and spread it evenly across the tin. Tap out any excess flour.
Pour the batter into the prepared tin and tap it gently on the counter to release any air bubbles.
Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, let the cake cool in the tin for 5-10 minutes.
Carefully remove the cake from the tin and place it on a wire rack to cool completely before adding the glaze.
Jam Glaze Preparation:
In a small bowl, take 3-4 tablespoons of mixed fruit jam.
Mix the jam well until it reaches a smooth, spreadable consistency. Warm it slightly if needed.
Spread the jam evenly over the top of the cooled cake using a spatula or spoon.
Decoration:
Dust a light layer of powdered sugar over the jam glaze using a sieve for a snowy effect.
Place a few fresh mint leaves in the center for a festive touch.
