Ingredients
2nosRaw Mango
1tspRoasted Cumin Powderor to taste
1tspBlack Salt
Saltor to taste
4cupWater
Instructions
Rinse and then wipe dry the mangoes.
On a gas stovetop, keep a roti or papad rack. Place the mangoes on top of it.
Turn them at regular intervals to ensure that they are uniformly roasted and cooked.
The peels should get charred.
Slid a knife along one of the sides to check for doneness; the knife should slide freely without resistance.
Set aside the roasted mangoes to cool to room temperature. You can also soak them in water for a few minutes before peeling. Remove the burnt peels after they have cooled.
Scrape the cooked mango pulp directly into the bowl with a sharp-edged spoon or knife. Scrape the peels as well.
Add sugar, black salt, salt and roasted cumin powder to it.
Mix everything very well.
Now add 4 cup of water and mix everthing well. Adjust the water consistency to your liking. If you like your aam ka Panna thick, reduce the water quantity.
Now roughly crush few mint leaves in mortar pastel. And divide the quantity of Aam panna and add mint mint leaves and give it a nice stir. So two type of aam panna is ready.
Add a couple ice cubes to the aam panna and serve. Aam panna is best served cold.
Notes
If you don't have jali stand then you can keep mango straight on the stovetop. But you be able to keep one at a time.You may adjust the cumin powder, salt, and sugar to taste.Instead of refined sugar, you can use jaggery or brown sugar, although the color and flavor will differ slightly.Semi-ripe mangoes can also be used.You can even grind the mango pulp and make aam panna.
