Makhana Kheer is a traditional healthy Indian dessert made by simmering Makhana's in milk till it becomes creamy. Makhana is also known as "Lotus seeds" or "Foxnuts." This dessert is simple and quick to make, taking less than 30 minutes with just a few basic ingredients. Makhane ki kheer is a perfect dessert if you are fasting.
Add chopped almond and chopped cashew and roast them nicely.
Once you see the cashews and almonds are slightly golden brown in color add raisins to it.
Roast everything together, and when you see the raisins are slightly getting pulpy. Turn off the flame. Take it out in a plate and set aside.
Take a pan add 1 tsp ghee.
Add 2 cups of makhana and roast them for about 2-3 minutes. Set aside.
Now add 1 1/2 cup of roasted makhana in a grinder jar and coarsely grind it. Set aside.
Keep 1/2 cup of makhana as whole.
Now add 2 cups of milk in the same pan.
Add whole roasted makhana.
Let it boil for 5 minutes then add coarsely ground makhana and the whole makhana's.
Let it boil, and cook until it's done.
Add sugar and green cardamoms and cook for another 2-3 minutes.
Once done add dryfruits and let it boil for few minutes.
Garnish with some more dry fruits and serve hot or cold.
Notes
After the makhana kheer has cooled down, add warm milk to modify the consistency before serving.Makhana Kheer stays good for about 2-3 days in the refrigerator in an airtight container.It cannot be frozen, as the milk will curdle when thawed or reheated.
