A thick, spicy tomato chutney made with ripe tomatoes, a whole bulb of garlic, fresh ginger and plenty of coriander. The tomatoes are cooked until soft and mashed right in the pan, so there is no need for a blender. Serve it warm with millet rotis, plain chapati, parathas and everyday meals.
Add the salt, turmeric powder and Kashmiri red chilli powder. Mix well.
Cover and cook on medium heat until the tomatoes become soft.
Meanwhile, crush the ginger and garlic together in a mortar and pestle to make a coarse paste.
Add the ginger garlic paste to the tomatoes along with a little water. Mix well.
Cover and continue cooking until the tomatoes are completely soft and cooked through.
Mash the tomatoes with the back of a spatula, right in the pan.
Continue cooking until the chutney turns thick.
Turn off the heat and add plenty of fresh coriander leaves. Mix well.
Chutney is now ready to serve.
Notes
This is a generously garlicky chutney, so the garlic is an important part of the flavour.Adjust the quantity to your taste. You can use ready-made ginger garlic paste if that is more convenient. There is no need to blend this chutney.Mashing the cooked tomatoes in the pan gives it a coarse, homely texture.Roughly sliced tomatoes soften easily and can be mashed with the spatula.Add plenty of fresh coriander after turning off the heat.It adds freshness and is an important part of this chutney.Cook the chutney until it is thick enough to scoop up with a roti.If it is still watery, cook it uncovered for a few more minutes.
