In a cooker, add ghee. Add the whole spices, curry leaves and onion. Cook till the onion becomes golden brown.
Add green chilli and ginger garlic paste and cook for 2 minutes.
Add chopped tomatoes and salt. Cook till they become soft and mushy.
Add dahi and all the dry spices. Cook for 2 minutes.
Now add rice and water. Water is generally twice the amount of rice, but you can add a little more if you like slightly soft or moist rice.
Close the cooker and cook for 2 whistles.
Let the pressure release naturally.
Fluff the rice gently and garnish with fresh coriander.
Serve hot along with raita and papad.

Use ripe tomatoes for best taste and natural color. Adjust water based on how you like your rice.Add a little extra water if you prefer soft and slightly moist rice.Do not add too much garam masala, a small quantity is enough.Cook the tomato masala properly before adding rice.This helps in better flavor.If using basmati rice, soak it for 15 to 20 minutes for better texture.You can skip whole spices if you want a simpler version.This tomato rice tastes best when served fresh with dahi or raita.
