Easy Eggless Oatmeal Cookies with Raisins and Cranberries
These eggless oatmeal cookies are soft, chewy, and buttery sweet. They're filled with a mix of plump raisins and cranberries and flavored with cinnamon. This recipe is very easy to make and is my favorite way to make oatmeal raisin cookies without eggs.
1/2cupUnsalted butter softened at room temperature
1tbspWhite sugar
2/3cupRaw sugar
4-5tspWater
1 1/3cupsRolled Oats
3/4cupmix of golden Raisins, black raisins and cranberry
Instructions
Preheat the oven to 350°F (180°C) for at least 10 minutes.
Apply butter on baking sheet and set side.
In a bowl, take dry ingredients (all purpose flour, baking soda and ground cinnamon). Whisk until everything is mixed properly.
In another large bowl, add softened butter, white sugar and raw sugar. Start beating using a hand mixer (or you can use a stand mixer with paddle attachment). Beat it until smooth.
Then add water. Again beat until combined. Using a spatula scrap the sides of the bowl.
Add flour mixture and rolled oats. Mix using your hand until everything comes together like a soft dough.
Now add soaked raisins and cranberry and fold them into the cookie dough.
Now take a portion of the cookie dough into your palm. Shape into a fairly smooth ball. Flatten it slightly. So it becomes a disk shape. (you can take size as per yor choice)
Arrange it on a baking sheet. Place them a few inches apart so cookies have some room to expand.
Bake into the preheated oven for about 30 minutes. (you can check the cookies after 20 minutes if it is baked with toothpick as baking time may vary depend on oven)
Let it cool down for 5 minutes so they firm up. Then transfer them on a cooling rack to cool down. Serve them warm or at room temperature.
