This recipe is very easy to make and is my favorite way to make oatmeal raisin cookies without eggs. (step-by-step-recipe)

  3. If the raisins are fresh, and soft because you’ve just opened the packet, there’s no need to soak them. However, if the raisins have been in the fridge and they seem dry and hard (though still soft when you bite), then you should soak them.
  4. To soak raisins for eggless oatmeal cookies, simply put them in warm water for 10 minutes. After soaking, drain the water and pat the raisins dry with a kitchen towel or paper towel.

Basic Ingredients Used to Make this Recipe:

All-purpose flour: All-purpose flour is the key ingredient that provides desirable texture and structure in cookies. Today I used all-purpose flour but for a healthier twist, you can use whole wheat flour. But then the cookies made with whole wheat flour will make your cookies denser and give them a nuttier flavor.

Cinnamon: The addition of cinnamon to these healthy oatmeal cookies makes them taste warm and a little spicy. It goes well with the sweetness and makes the cookies taste more flavorful.

Baking Soda: Generally, I don’t prefer using baking soda in any of my recipes, but there are somewhere it becomes an essential ingredient and you cannot avoid it this Eggless oatmeal cookie is one of those. It becomes all the more important when you don’t have the option of adding eggs because you are a vegetarian like me. So in this recipe, baking soda helps your cookies rise and become light and fluffy. Without it, your cookies might be a bit flat and dense.

Unsalted Butter: Butter, especially unsalted butter at room temperature, enhances the flavor and softness of your cookies. When mixed with sugar, it helps the cookies rise by trapping air. In case, unsalted butter is not available, you can use coconut oil, ghee, or vegetable oil as substitutes. Just keep in mind that these alternatives might slightly change the texture and taste of your cookies due to their different fat and moisture contents.

Rolled Oats: Rolled oats make your cookies chewy and satisfying. They add fiber and nutrients for a healthy touch and give your cookies a nice texture and fuller feel.

Ingredients

  • 3/4 cup All purpose flour Maida
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Baking soda
  • 1/2 cup Unsalted butter softened at room temperature
  • 1 tbsp White sugar
  • 2/3 cup Raw sugar
  • 4-5 tsp Water
  • 1 1/3 cups Rolled Oats
  • 3/4 cup mix of golden Raisins, black raisins and cranberry

Instructions

  • Preheat the oven to 350°F (180°C) for at least 10 minutes.
  • Apply butter on baking sheet and set side.

  • In a bowl, take dry ingredients (all purpose flour, baking soda and ground cinnamon). Whisk until everything is mixed properly.

  • In another large bowl, add softened butter, white sugar and raw sugar. Start beating using a hand mixer (or you can use a stand mixer with paddle attachment). Beat it until smooth.
  • Then add water. Again beat until combined. Using a spatula scrap the sides of the bowl.

  • Add flour mixture and rolled oats. Mix using your hand until everything comes together like a soft dough.

  • Now add soaked raisins and cranberry and fold them into the cookie dough.
  • Now take a portion of the cookie dough into your palm. Shape into a fairly smooth ball. Flatten it slightly. So it becomes a disk shape. (you can take size as per yor choice)

  • Arrange it on a baking sheet. Place them a few inches apart so cookies have some room to expand.
  • Bake into the preheated oven for about 30 minutes. (you can check the cookies after 20 minutes if it is baked with toothpick as baking time may vary depend on oven)
  • Let it cool down for 5 minutes so they firm up. Then transfer them on a cooling rack to cool down. Serve them warm or at room temperature.
