Mango kulfi is a yummy frozen dessert from India. It has a creamy texture and tastes really good because of the sweet mango flavor. People love to eat it, especially on hot days to cool down.
In a blender, add diced mango, milk, and condensed milk. Blend till smooth.
Now add cream, cardamom powder, and saffron to it.
Blend nicely until the cream gets mixed nicely.
After blending, just check if the sweetness is correct. If the sweetness is more, add 1 to 2 tbsp of cream, and if you find the sweetness is less add 1 to 2 tbsp condensed milk. After adding blend again.
Pour the mango mixture into kulfi molds, cutting chai glasses or small plastic cups. If using plastic cups,or chai glasses, cover each cup with aluminum foil and insert a popsicle stick or wooden ice cream stick into the center of each kulfi.
Place the kulfi molds or cups in the freezer and let them freeze for at least 6 to 8 hours, or preferably overnight, until they are completely set.
Once the mango kulfi is frozen and set, remove it from the freezer. Gently pull the stick to remove the kulfi from the mould or gently slide a butter knife along the edges of the mold. This will help loosen it from the sides.
If the kulfi is still difficult to remove, you can try dipping the mould in warm water for a few seconds. This will help soften the edges and make it easier to unmold.(make sure you are dipping the mould halfway from the base)
If you are using kulfi mold then you can rub the mold between your palms. The warmth from your hands will help release the kulfi.
Once the kulfi is successfully unmolded, garnish the mango kulfi with saffron strands and pista.
Now you can slice it and serve it immediately, either on a plate or in serving bowls or glasses.
If you prefer, you can serve the kulfi directly in the moulds.
