In India during summer, there is a high demand for kulfi and ice creams. Kulfi is a frozen Indian dessert traditionally made with thickened sweetened milk known as Rabri or dried milk solids called Khoya (Mawa).

Making kulfi the traditional way with rabri takes a long time because the milk is simmered slowly and reduced. You need to stir the milk often, which gives your arms a good workout.

Kulfi has a different texture compared to ice cream. Ice cream is light, fluffy, and soft, while kulfi is denser. This means that ice cream melts in your mouth, but with kulfi, you have to take a bite to enjoy its delightful richness.

But the recipe I am sharing today is, quick mango kulfi made with whole milk, sweetened condensed milk, cream, and of course mangoes.

To make the kulfi smooth, use mangoes without fibers. I used baganfalli mangoes. The color of kulfi might get varies basis on the type of mangoes you use.

You can use any sweet mango variety for this. Since it’s a shortcut version, there might be a few ice crystals, but the recipe is easy and gives a good result, so it’s not a big deal right? Will be sharing the traditional Kulfi recipe also very soon.

This no-cook mango kulfi recipe is quick and easy to make.

Storage:

Leftover mango kulfi can be frozen for some weeks. You can also make a big batch and freeze mango kulfi for a month. But as I always say, anything tastes great when they are fresh.

Here are some of the tips by following which you too can make these kulfi’s at home with ease.

Milk: I recommend using whole milk when making mango kulfi. It’s better to avoid skimmed or low-fat milk. Whole milk has a higher fat content, which gives the kulfi a creamy and rich texture.

Cream: You can make this mango kulfi recipe using light cream, whipping cream, or heavy cream.

Mangoes: It’s important to use sweet-tasting mangoes. Avoid slightly tangy or sour mangoes as they can cause stomach discomfort when combined with dairy products. Also to get smooth and creamy kulfi, make sure the mangoes you use are not fibrous.

Flavoring: You can change and try different flavors in this recipe.

If you don’t have cardamom or saffron, you can leave them out and still have a yummy mango kulfi. Make the recipe according to your own taste and what ingredients you have.

Mangoes: Mangoes are the most important key ingredient because they give the kulfi its delicious flavor. If you don’t have fresh mangoes, you can use canned mango pulp or frozen mango pieces instead.

Sweetened Condensed Milk: This is added to make the kulfi sweet and creamy. You can use any brand of sweetened condensed milk for this recipe.

Heavy Cream: Heavy cream makes the kulfi rich and creamy. You have the choice to make this mango kulfi recipe using light cream, whipping cream, or heavy cream.

Milk: Milk is used to adjust the consistency of the kulfi. Whole milk is best for this recipe.

Cardamom Powder: Cardamom gives the kulfi a special flavor and smell. If you don’t have cardamom, you can use a little bit of cinnamon powder instead.

Nuts: Chopped nuts like pistachios or almonds can be added for a nice crunch.

Ingredients

  • 1 cup Chopped mango
  • 1.5 cups Milk whole milk
  • 200 grams Sweetened condensed milk
  • 1/2 cup Cream whipping or heavy cream
  • 1/2 tsp Cardamom powder
  • 1 pinch Saffron strands optional

Instructions

  • In a blender, add diced mango, milk, and condensed milk. Blend till smooth.

  • Now add cream, cardamom powder, and saffron to it.
  • Blend nicely until the cream gets mixed nicely.
  • After blending, just check if the sweetness is correct. If the sweetness is more, add 1 to 2 tbsp of cream, and if you find the sweetness is less add 1 to 2 tbsp condensed milk. After adding blend again.
  • Pour the mango mixture into kulfi molds, cutting chai glasses or small plastic cups. If using plastic cups,or chai glasses, cover each cup with aluminum foil and insert a popsicle stick or wooden ice cream stick into the center of each kulfi.

  • Place the kulfi molds or cups in the freezer and let them freeze for at least 6 to 8 hours, or preferably overnight, until they are completely set.
  • Once the mango kulfi is frozen and set, remove it from the freezer. Gently pull the stick to remove the kulfi from the mould or gently slide a butter knife along the edges of the mold. This will help loosen it from the sides.
  • If the kulfi is still difficult to remove, you can try dipping the mould in warm water for a few seconds. This will help soften the edges and make it easier to unmold.(make sure you are dipping the mould halfway from the base)
  • If you are using kulfi mold then you can rub the mold between your palms. The warmth from your hands will help release the kulfi.
  • Once the kulfi is successfully unmolded, garnish the mango kulfi with saffron strands and pista.

  • Now you can slice it and serve it immediately, either on a plate or in serving bowls or glasses.
  • If you prefer, you can serve the kulfi directly in the moulds.
  • Whichever way you choose to serve it, enjoy the deliciousness of the kulfi.
    But if you have inserted the stick, then enjoy your mango kulfi wit stick.
