Instructions
In a bowl, add fresh chilled curd and sugar.
Now, with a handheld wooden churner (called mathani in Hindi) or an immersion blender or a wired whisk, whip the curd until it becomes smooth.
Now add cardamom powder to it. Mix well. (You can add 1 tbsp of rose water instead of cardamom powder, if you want.
Pour lassi in a glass and top it with some thick malai, nuts and raisins and serve chilled. You can add few icecubes if you want to. You can even top it up with few saffron strands.
Notes
You can add little water, in case you want thinner lassi. But I personally do not prefer adding water. Because the lassi gets thinner automatically when you blend it in a blender and also after the sugar gets dissolved. But if you are blending with hand whisker then you might want to add little water. But if you are someone like me, who loves thick lassi then avoid adding water to it, even then.
