Tamarind Chutney
Tamarind chutney is very popular for its natural sour taste and this can be served with almost all kinds of fried snacks and chaats.

Instructions
In a saucepan add 1.5 cup of water and tamarind and bring it to a boil. Once it comes to a boil switch off the flame and let it cool down completely.
Transfer the cooled tamarind water along with the tamarind to a blender and grind it to paste.
Use a strainer and remove all the discards.
Transfer the Tamarind water to a pan and to this add in the remaining ½ cup of water. Mix well and cook for 2 mins.
Now to this add-in Jaggery. I used organic Jaggery powder.
Next add in the Red Chilli Powder, Ginger Powder, Cumin Powder, and Salt.
Combine everything and add in the Sugar.
Mix well and then cook till the consistency is slightly thick or as you prefer. Tamarind Chutney is ready.
So the tamarind chutney is ready to be served.
Stays good in the refrigerator for 2 weeks if stored properly.
