This Vegetable Pasta Salad recipe is a quick to make salad recipe that can double up as a good substitute for one of your meals.
Haah….finally my daughter’s examinations are over. I felt like it was my examination. It’s been almost 15 days and I was after her, preparing her for the exams.
I know I shouldn’t be saying it, but I cannot resist from saying that I hate the education system here. There is way too much burden on the kids. The curriculum is vast, the syllabus is huge, lots of homework and projects and finally the school timings of about 8 hours. And all this for the 1st standard.
At times I think of how those small minds bear all this burden. At an age when they would want to play as much as they can, they seldom get time to play due to the heavy load of homework.
As per me, kids should get enough freedom to enjoy their childhood rather than burdening them with the multiplication tables and problem sums. What do you think???
Alas! None of that is in our hands and we live in a society and system that’s already created and is running. We are just one of the many who are running on that treadmill.
So Let things be the way they are let us carry on. What we can probably do at our end, to ease of the burden on these little geniuses is to not overburden them with expectations. Let them be kids for a while and treat them like kids.
Well since I was very busy with her Maths and IT exams for this entire week, our food menu consisted mostly of recipes that were quick and easy to make. And this easy to make salad recipe, was one of that menu.
Vegetable Pasta Salad Recipe
Vegetable Pasta Salad Recipe is a very simple and easy to make recipe. It does not need a lot of time. Since I have used elbow macaroni in this salad recipe, it is a nice substitute for one of your meals and even kids will like it. I have used normal country tomatoes in this recipe but you can also use cherry tomatoes.
Almost all of the ingredients in this recipe should be readily available at home and hence this can also be the ideal recipe for the day you have that feeling of relaxing and not spending hours in the kitchen cooking your meals.
Anyways let’s jump on to the recipe now and see how easy it is to make.
Ingredients
- Elbow macaroni pasta – 1 cup
- Tomato – 2 cut in small cubes
- Carrot – 1 grated
- Green chilli – 2 chopped
- Paneer – 1/2 cup crumbled
- Salt – to taste
- Pasta salad dressing – as required
- Coconut oil – 1 tsp
Instructions
- In a bowl combine everything mention above.
- Mix everything well and serve.
