Makhana Kheer Recipe is a rich and creamy dessert ideal for any festive occasion or Vrat days (Indian fasting). During the Janamashtami, it’s a must-make at my house. It’s also appropriate for festivals like Navratri, Ekadashi, or Shivratri.

Our go-to food during vrat days is the common sago and samo rice. We usually forget about the delectable makhana kheer.

When served cold, this makhana kheer tastes divine. You can replace sugar with jaggery if you want to.

One more important thing is that you can feed makhane ki kheer to your growing babies by blending the roasted makhana to a fine powder rather than keeping it coarse when cooking it for them.

So, if you’re tired of the same old rice kheer, sabudane ki kheer, and so on, give this healthy makhane ki kheer a try; I promise you’ll be pleasantly surprised.

What is Makhana?

Makhana is also known as lotus seeds, fox nuts, and Phool makhana. It’s actually the puffed lotus seeds or the puffed fox nuts that have high nutritional and medicinal values and are mostly grown in the states of Bihar in India.

Because of its health benefits, makhana was previously frequently used in Indian cuisine, but its use has slowly reduced. It is highly recommended that you use this ingredient in your regular diet. This Makhane ki Kheer is a delicious way to include this superfood into your diet.

Milk: If you want the best results, prefer using whole fat milk.

Sugar: Today I have used sugar for this recipe. But you can add some condensed milk to the kheer to speed up the cooking process. It will thicken as well as sweeten the kheer.

Ingredients

  • 2 cups Makhana
  • 1 ltr Boiled Milk
  • 1/4 cup Sugar
  • 1 tbsp Almond finely chopped
  • 1 tbsp Cashew finely chopped
  • 1 tbsp Raisins
  • 1/2 tsp Cardamom Powder
  • 2 tsp Ghee

Instructions

  • Heat 1 tsp ghee in a pan.

  • Add chopped almond and chopped cashew and roast them nicely.
  • Once you see the cashews and almonds are slightly golden brown in color add raisins to it.
  • Roast everything together, and when you see the raisins are slightly getting pulpy. Turn off the flame. Take it out in a plate and set aside.
  • Take a pan add 1 tsp ghee.

  • Add 2 cups of makhana and roast them for about 2-3 minutes. Set aside.
  • Now add 1 1/2 cup of roasted makhana in a grinder jar and coarsely grind it. Set aside.
  • Keep 1/2 cup of makhana as whole.
  • Now add 2 cups of milk in the same pan.

  • Add whole roasted makhana.
  • Let it boil for 5 minutes then add coarsely ground makhana and the whole makhana’s.
  • Let it boil, and cook until it's done.
  • Add sugar and green cardamoms and cook for another 2-3 minutes.

  • Once done add dryfruits and let it boil for few minutes.
  • Garnish with some more dry fruits and serve hot or cold.

Notes

After the makhana kheer has cooled down, add warm milk to modify the consistency before serving.
Makhana Kheer stays good for about 2-3 days in the refrigerator in an airtight container.
It cannot be frozen, as the milk will curdle when thawed or reheated.

Makhanas, also known as fox nuts, is one of the healthiest meals for babies and can be introduced to them once they reach the age of six months. To make Makhana Kheer for babies, first roast the makhana in ghee till crispy, then finely grind it.

Bring the milk to a boil, then stir in the powder. Cook the kheer for 8-10 minutes with cardamom powder. Don’t make thick and creamy kheer because it will be difficult for them to digest. Make sure to cool before serving.

Can Makhana be eaten during fasting?

Phool Makhana has a long shelf life and can be stored for months in an airtight container. Keep them out of the sun and away from dampness.

How to make makhane ki kheer with jaggery?

To sweeten the kheer and make it healthy, you can use jaggery instead of sugar. Remove the pan from the heat and stir in the crushed jaggery after it is done.

Stir in the jaggery until it is completely dissolved. If you add jaggery while the kheer is still boiling, the milk will split and the kheer will be ruined.

How to make makhana kheer with condensed milk?

Cook the makhana in milk until they are soft and tender, then add sweetened condensed milk to the pan and cook for another 5-6 minutes. Add crushed cardamoms and your kheer is ready.

How to make vegan makhane ki kheer?

Replace ghee with vegan butter and whole milk with any plant-based milk like coconut milk, almond milk, or soy milk to make a vegan version of this kheer.

If you’re using coconut milk, make the makhana with thin coconut milk. When the kheer is done, pour in the thick coconut milk and turn off the heat. It will prevent coconut milk from splitting.
