Soya chunks masala recipe is a healthy, tasty and quick to make side dish for Rotis and Rice and is a nice substitute for meat. So vegetarians, here is a recipe just for you guys.

I am getting Bored Mamma!!!

This is the second month of her summer vacation. And the day her vacations started we planned for two trips and that is how we kept her engaged for the first month of her vacation.

But come the second month and we found it too difficult to keep her busy.

I felt really bad for her and I had this feeling that I wasn’t able to spend a lot of time with her. Of course, due to my daily routine, commitments and my blogging here.

After a week of seeing her whiling away time with nothing worthwhile to do, we decide on going out at least during weekends. So, the last two weekends we went to a mall nearby and watched a couple of cartoon movies.

There is a nice playing area over there and we took her to the Playzone there, where she played for hours.

And, I shouldn’t forget about the donuts we had there, from MOD (Mad over Donuts). The three of us love MOD donuts a lot and whenever we go to that mall, we ensure that we have donuts there.

In the evening when we were driving back home we thought she will keep herself busy and wouldn’t say anything at least for another week and that she would be busy with T.V, PAINTING, BARBIE and stuff like that.

But just after three days, she started rhyming the same thing again – “I am getting bored, Mamma”.

We then ordered an activity crate for her, which is a monthly subscription.  The crate came and it was nice with a lot of creative things to do. She was so happy to receive those stuff.

But then she finished all those activities in about a day.  Hahaha….

Something that we realized is the fact that nothing can replace the “Quality time” you spend with your kids. And it matters a lot to them and that is precisely what they are looking for when they come to you saying, “they are bored”.

So now, the two of us are ensuring that both of us spend some time one by one with her every day.

And guess what! She never complained about getting bored after that.

As we all know that Soya chunks or soya nuggets have a lot of health benefits. Soya is an excellent source of protein and is also rich in vitamin B and Omega-3 fatty acids. It tastes real good with roti and paratha. Soya chunks recipe is a good replacement for meat.

Ingredients

To fry Soya chunks

  • Soya Chunks - 1 cup 250 gm
  • Red chilli Powder – 1/2 Tsp
  • Coconut oil/ Vegetable oil - 1/2 tbsp
  • Salt - to taste

To fry coconut

  • Curry leaves - a few
  • Asafoetida - a pinch
  • Chopped Coconut – 1/2 cup
  • Mustard seeds - 1/4 tsp
  • Coconut oil/ Vegetable oil - 1/2 tbsp

To make Soya chunks Masala

  • Onion – 2 thinly sliced
  • Tomato- 1 thinly sliced
  • Ginger-garlic Paste – 2 tsp
  • Cumin seeds – 1/2 tsp
  • Cinnamon stick - 1 small piece
  • Whole red chilli - 1 broken
  • Coriander Powder – 2 tsp
  • Chicken Masala Powder - 1 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala Powder – 1 tsp
  • Salt – To Taste
  • Coriander leaves - handful chopped
  • Coconut oil/ Vegetable oil – 1 tbsp

Instructions

Method to fry soya chunks:

  • Put the dried soy chunks in boiling water for 6 – 8 minutes.
  • Drain and wash with cold water. Squeeze out the water well. Slice into two pieces and set aside.
  • Heat oil in a frying pan, add soya chunks, redchilli powder and salt.
  • Fry for few minutes until it becomes slight crispy.
  • Once done take it out in a plate and set aside.

Method to fry coconut:

  • Now in the same pan, heat oil add mustard seeds and let it splutter.
  • Now add curry leaves and fry for few seconds.
  • Add chopped coconut and asafoetida to it.
  • Fry until golden brown.
  • Once done take it out in a plate and set aside.

Method to make soya chunks masala:

  • Heat oil in a deep frying pan.
  • Add cumin seeds and let it splutter.
  • Now add cinamon sticks and the whole red chilli and fry for few seconds.
  • Add onion, salt and turmeric powder to it and fry until golden brown.
  • Add ginger-garlic paste and fry until the raw taste goes off.
  • Now add coriander powder, chicken masala powder and garam masala. Mix.
  • Fry the masala stirring in between until the raw smell of masala goes of.
  • Now add tomatoes, mix it and cover it with a lid. (Keep it on a medium flame)
  • Keep stirring covering in between.
  • Remove the lid once the tomatoes gets mashed properly.
  • Now add soyachunks to it and mix it well.
  • Add hot water as needed and mix everything well.Let it boil.
  • Once it gets boiled add fried coconut and coriander leaves. Mix.
  • So the soya chunks masala is ready to serve now.
  • You can serve it along with roti, rice, poori or naan.
