Strawberry Coconut Smoothie is a low carb diet recipe which is very simple to make and has only 2 ingredients both of which are low on carb. So if you are on a low carb diet, you are surely going to enjoy this recipe.
Over the last couple of months, me and Dilip have suddenly become health conscious. Low sugar foods, exercising, conscious dieting, intermittent fasting, waking up early in the morning and many more such things.
But whatever it is we are enjoying every bit of it.
A couple of weeks back the two of us went on a low carb diet. We gave up everything that had carb in it and did a little bit of calorie counting as well. And a low carb diet meant that there was no munching, no sugar and no overeating. The results were just awesome. We both lost around 4 kgs in about 10 days. And the best part was that we lost almost 1.5 inches on our waist (the stubborn fat, you know).
There was some vested interest behind going on a diet. I was planning to travel to my native to meet my parents. And I am sure you know what it means. Staying with parents means lots of love and lots of tasty food, which automatically results into too much of weight gain.
And we did not want to gain weight and feel bad about it after we returned. So we thought of losing some weight before we travelled so that when we returned, we would maintain our weights in a worst case scenario.
Also we felt that if we lost some weight, we would feel a lot more conscious about what we are eating and how much we are eating, just because of the efforts that we had to put in to lose all that weight.
Strawberry Coconut Smoothie
Strawberry Coconut Smoothie is one of those recipes which I created when we were on low carb diet.
In fact in about 5 weeks from now, we are planning to launch our first book on “Low Carb Diet Recipes” for people who want to diet and lose weight without having to give up on eating tasty food.
You will see many more tasty recipes like this one, in that book.
This recipe is simple to make and the two primary ingredients are Strawberry and Coconut, both of which are low on carbohydrates. We have used honey which has a sugar content in it, but if you wish you can completely avoid adding honey.
So let us check out the recipe.
Ingredients
- coconut Milk – 300 ml
- Strawberry – 1 cup chopped
- Vanilla Extract – 1/3 tsp
- Honey – 1/2 tbsp
To garnish
- Coconut flakes
- Strawberries
Instructions
- In a blender add coconut milk, strawberries and vanilla extract . Blend until smooth. Smoothie will be thick like soft serve ice cream. Add to glasses and garnish with coconut flakes and diced strawberries.
