Ingredients

To Cook Kala Chana

  • 1 cup kala chana soaked , Bengal gram
  • 1/2 tsp salt
  • 1 cup water

For Green Chutney

  • coriander leaves handful
  • 5 garlic cloves
  • 1/4 tsp salt
  • 2 tbsp water

To Roast Kala Chana

  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp oil

To Assemble the Chaat

  • 1 onion small, finely chopped
  • 1 potato boiled, diced
  • 1/2 cucumber chopped
  • 1 tomato chopped
  • 1-2 green chillies chopped
  • 1-2 tbsp coriander leaves chopped
  • 2 tbsp green chutney or as needed
  • 1/4 tsp chaat masala
  • 1/2 lemon juice
  • Salt to taste

Instructions

  • Add soaked kala chana, water, and salt to a pressure cooker.
  • Cook for 4–5 whistles until the chana is soft but not mushy. Drain and keep aside.
  • For the green chutney, blend coriander leaves, garlic, salt, and water into a smooth paste.
  • Heat oil in a pan. Add boiled kala chana.
  • Add turmeric powder, red chilli powder, coriander powder, and cumin powder.
  • Roast on medium heat for 4–5 minutes until the spices coat the chana well.
  • In a mixing bowl, combine roasted kala chana, onion, potato, cucumber, tomato, and green chillies.
  • Add green chutney, chaat masala, lemon juice, and salt. Mix well.
  • Garnish with fresh coriander leaves and serve immediately.

Notes

Do not overcook the kala chana.
Adjust spice and lemon juice according to taste.
Skip potato for a more protein-rich version or if you are on strict weight loss journey.
