Basic Ingredients Used to Make Matar Puri:
Fresh Green Peas (Matar): The Star Ingredient. Green peas add natural sweetness, fiber, and vibrant color to the pooris.
They are rich in vitamins, minerals, and antioxidants, making these pooris healthier than regular ones.
Whole Wheat Flour (Atta): The base of the recipe. Provides structure and elasticity to the dough. Whole wheat is healthier than refined flour (maida) and adds a nutty flavor and fiber. You can use maida instead of wheat flour if you want to.
Semolina (Sooji): Sooji add a crispiness, helps to make the puris crispy while retaining their softness inside. It also absorbs excess moisture from the dough, preventing oily pooris.
Coriander Leaves: Add freshness & flavor. Enhances the aroma and works as a natural cooling agent for digestion.
Green Chilies: Brings a mild to medium spice level that balances the sweetness of peas. Can be adjusted as per taste.
Carom Seeds (Ajwain): Adds a unique earthy flavor and helps in digestion. Prevents bloating, making pooris easier on the stomach.
Oil: You would be needing oil for kneading & deep Frying. Oil in the dough keeps it soft and makes rolling easier.
Salt: Enhances the overall taste. A small amount of salt balances the flavors of all other ingredients.
