I developed this recipe one day when I wanted to make something different yet easy, and since then, it has become a regular meal at our home.

Ingredients

For the Rice

  • 1 cup Rice normal, regular
  • 20 pieces Soya chunks
  • 2 Onions medium, thinly sliced
  • 1 Carrot big, chopped
  • 3 Green chillies slit
  • 2 Dry red chillies
  • Salt as needed

For the Seasoning

  • 3 to 4 tbsp Ghee
  • 1 tbsp Cumin seeds
  • 1 inch Cinnamon stick
  • 2 Cloves
  • 1 Cardamom
  • 1 Bay leaf
  • 4-5 Black peppercorns
  • 1-2 Javitri mace
  • 1 Black cardamom

Instructions

  • Bring water to a boil and add soya chunks and salt. Turn off the flame and let it soak for about 30 minutes.
  • After 30 minutes, drain excess water and rinse with good water at least twice and then squeeze out all the water from the soya chunks and cut them into halves.
  • Cook the rice separately and keep it aside to cool.
  • Heat ghee in a kadai and add cumin seeds, cinnamon, cloves, cardamom, bay leaf, dry red chilli, black pepper, javitri, and black cardamom.
  • Add thinly sliced onions, soya chunks, green chillies, and salt. Sauté until the onions turn golden brown.
  • Add chopped carrots and cook for a few minutes. Do not overcook the carrots; they should remain slightly crunchy.
  • Add the cooked rice and mix everything well.
  • Serve hot and enjoy the aroma of ghee with the goodness of soya chunks.
