  • 2 cups Cashews
  • 1 1/4 cup water
  • 2-3 cloves Garlic
  • 1 tsp Salt

Instructions

  • In a bowl add cashews, cover with water and soak for about 2 hours.

  • Now in a blender jar add soaked cashews, garlic, salt and water.

  • You can thin out by adding some more water to desired consistency.

Yes, it’s very important to soak the raw cashews in water for 4-8 hours before blending. Soaking cashews helps in softening them up so you can get an ultra-smooth, creamy sauce. But in case you are short of time you can do a quick 15-30-minute hot water soak and that too should work.

Can I use roasted cashews instead of raw?

Roasted cashews will give the sauce a nuttier flavor, but can make the texture grainy. This sauce looks and tastes good if it has a smoother texture. So I would advise using raw unsalted cashews for this recipe.

How can I make the sauce thinner or thicker?

To thin it out, you can add more water. Make sure to add a tablespoon or two at a time until you reach your desired pourable consistency. To thicken, you can add more cashews and that should work.
