About Instant Gajar Muli Mirch ka Achar:

Pickle, or achar, is a favorite Indian side dish made with different vegetables. Mango and lime are the most common because they are naturally tangy and sour.

This Gajar Mooli ka Achar recipe is made with carrots and radishes, sliced thick and mixed with simple spices.

It has a spicy, tangy flavor and goes well with poori, paratha, roti or dal-rice. And the best part I like about this recipe is that it does not require sunlight and you can make this pickle with everyday ingredients.

While mango, lime, and green chili are common in pickles, but this gajar muli hari mirch ka achar version is unique.

The spices, like mustard and red chili powder, give it a strong and delicious flavor.

Winter is the best time to make this mixed achar, as fresh carrots and radishes are abundant in the market.

Serving Suggestion:

Enjoy this mixed achar as a side dish with dal and steamed rice for a flavorful meal.

Pair it with parathas, stuffed rotis, or theplas for a spicy and tangy kick.

Add a small portion to your tiffin box to enhance the taste of your lunch.

Serve it alongside curd rice or khichdi for a comforting and balanced meal.

Storage Suggestion:

Store the pickle in a clean, airtight glass jar to keep it fresh and flavorful.

Place the jar in a cool, dry spot away from direct sunlight.

If you live in a warm or humid climate, store the pickle in the refrigerator to extend its shelf life.

Always use a dry spoon to take out the pickle to avoid moisture contamination, which can spoil it.

If you store properly, this gajar mooli ka achar stays fresh for up to 2-3 weeks.

Pro Tips:

Slice Evenly: Cut carrots and radishes into thin, uniform slices to ensure they absorb the masala evenly.

Roast Spices: Make sure to roast the spices slightly before grinding to enhance their flavor and aroma.

Adjust Spice Level: You can increase or decrease red chili powder to match your spice preference.

Fresh Ingredients: Use fresh and firm carrots and radishes to get the best crunch and flavor.

Taste Before Storing: Let the pickle rest for a few hours after mixing, then taste and adjust salt, spices, or tanginess as needed.

Avoid Water Contact: Ensure all tools, jars, and utensils are completely dry before use to prevent spoilage.

Why You Should Make this Recipe:

This Gajar mooli hari mirch ka achar is more than a side dish; it adds amazing flavor to any meal. The mix of mustard and red chili gives it a unique smell, and the crunchy carrots and radishes make it even better.
