This easiest recipe for Aam Panna is a quick and tasty summer beverage you can make at home. Also known as kairi ka panna, this is a cool summer drink made with raw mango.
Aam ka Panna is nutrient-dense and aids in overcoming the negative effects of severe summer. (Step by Step photos with detailed instructions).
About Recipe for Aam Panna?
Aam ka Panna is a traditional summer cooler, popular in the northern and western part of India during summers. Kairi panha is a great remedy for heatstroke and dehydration.
So a glass of kairi panha doesn’t only refresh you, it also gives you many other health benefits as well.
Aam panna or raw mango drink comes in both sweet and salty flavor but sour to taste.
During the Summer season, Kairi ka Panna is prepared in every house, but the method of preparation varies from house to house.
My Mom used to make aap panha by roasting raw mango on charcoal until charred. I love the roasted version of aam panna, that too when the mangoes are roasted directly on the charcoal. It gives the drink a nice smoky flavor.
Today I am sharing my Mom’s version of making this recipe for Aam panna in two different flavors. One with mint flavor and the other one is a simple one.
Fresh raw mango is cooked in this recipe by roasting it on a gas stove, similar to how we roast baingan for baingan bharta.
In this manner, the mango is well cooked while simultaneously infusing the drink with a smokey flavor. When you take a sip of this roasted aam panna, it tastes like regular aam panna at first, but then the smoky flavor comes through.
You can use “totapuri mango” to make this recipe for aam panna. Because it is less sour than other raw mango. But incase totapuri mango is not available you can still make aam panna with any raw mango you get.
In addition, this dish should be prepared and served within a day, which is what I recommend. If you want to keep aam panna for a long time, prepare aam panna concentration, which can last up to three months. I’ll attempt to post the recipe soon.

- Because it has several heat-resistant characteristics, kairi panha is best consumed during the summer. Aam panna aids in the replenishment of lost salts in our bodies as a result of perspiration.
- Aam panna is a fantastic remedy for preventing diarrhea, which is prevalent in the summer.
- If we drink this raw mango drink during a hot day, it keeps our stomach cool.
- It is most effective in the treatment of indigestion and gastrointestinal problems.
- It’s high in iron and vitamin C, and it’s excellent to eat if you’re anaemic.
Serving Suggestion:
Aam Panna is best served chilled, especially during hot summer afternoons. Here’s how to enjoy it:
Pour into a glass and add ice cubes for that extra chill.
Garnish with a mint leaf or a pinch of roasted cumin powder just before serving.
You can also top it with a slice of lemon or a dash of black salt for more zing.
Serve it with lunch, after meals, or as a welcome drink for guests during summer.
Perfect as a natural summer cooler for both kids and adults.
Storage Suggestion:
You can easily make aam panna concentrate in advance and store it for quick use:
Store the concentrate in a clean, airtight glass bottle in the refrigerator.
It stays good for up to 7–10 days when kept chilled.
When ready to serve, just dilute with chilled water and mix well.
Shake or stir before use, as some spices may settle at the bottom.

Use sour, firm raw mangoes (preferably desi kairi) for the best flavor.
Boil or pressure-cook mangoes until soft, and allow them to cool before peeling.
Blend the pulp until smooth—strain it if you prefer a thinner texture.
Balance the sweet, salt, and spice based on your taste. Some like it sweeter, while others prefer a tangy-spicy kick.
Add a few fresh mint leaves while blending for extra freshness and color.
Make the concentrate and adjust water while serving to get the perfect consistency every time.

Basic Ingredients used to make Recipe for Aam Panna:
Raw Mango: Always use raw mangoes that are firm and dark green in color for this Aam ka Panna dish. Dark-colored mangoes are delicious and give this drink a sweet, tangy flavor.
Sugar: To sweeten this recipe, I have used sugar here. But for a healthy alternative, use crushed/powdered jaggery, which combines nicely with the Panna.
Roasted Cumin Powder & Black Salt: To add some zing to Aam ka Panna, toss the pureed aam ka Panna with rock salt and roasted cumin powder. These two ingredients bring a wonderful kick to this recipe.
Black Salt: Black salt enhances the tastes of Aam panna. So I love adding black salt.
Mint Leaves: I made this Aam ka Panna in two ways, with or without mint. So if you like the flavor of mint, add some or else skip.
Salt: And salt to taste!!!
Recipe for Aam Panna
Ingredients
- 2 nos Raw Mango
- 1 tsp Roasted Cumin Powder or to taste
- 1 tsp Black Salt
- Salt or to taste
- 4 cup Water
Instructions
- Rinse and then wipe dry the mangoes.
- On a gas stovetop, keep a roti or papad rack. Place the mangoes on top of it.
- Turn them at regular intervals to ensure that they are uniformly roasted and cooked.
- The peels should get charred.
- Slid a knife along one of the sides to check for doneness; the knife should slide freely without resistance.
- Set aside the roasted mangoes to cool to room temperature. You can also soak them in water for a few minutes before peeling. Remove the burnt peels after they have cooled.
- Scrape the cooked mango pulp directly into the bowl with a sharp-edged spoon or knife. Scrape the peels as well.
- Add sugar, black salt, salt and roasted cumin powder to it.
- Mix everything very well.
- Now add 4 cup of water and mix everthing well. Adjust the water consistency to your liking. If you like your aam ka Panna thick, reduce the water quantity.
- Now roughly crush few mint leaves in mortar pastel. And divide the quantity of Aam panna and add mint mint leaves and give it a nice stir. So two type of aam panna is ready.
- Add a couple ice cubes to the aam panna and serve. Aam panna is best served cold.

Can you boil mangoes in the traditional pressure cooker?
Absolutely! There are numerous ways to boil mangoes.
1). One of them is to boil in an uncovered pan on the stovetop.
2). Another way to speed up the process is to pressure cook the mangoes for 2-3 whistles until soft and tender.
Should you peel the mangoes for Aam ka Panna?
I prefer to boil the mangoes with the skin on to make the boiled mango panna. But then, there is no correct or incorrect method to do it. Some of you may believe that peeling is preferable, and that is also acceptable. And if you are running short of time then you can peel and cut the raw mangoes and then, boil them in water. Choose the option that most appeals to you.
