Potato Sandwich is one of my all-time favorite sandwiches, filled with spicy aloo masala. These sandwiches are really easy to make and require a few basic ingredients available in your very own kitchen.
Aloo Toast Sandwich is a combination of mashed potato, onion, tomato, ginger, and a few Indian spices. There are many ways to make these sandwiches and today I am sharing my style of making this easy-peasy potato sandwich recipe. Hope you like my variation today. 🙂
These Masala potato sandwiches are the best lunch-box recipe for the kids. This recipe is idle for breakfast too. I have used multigrain bread to make it more healthy, but you can also use white bread or wheat bread.
This tasty sandwich can be prepared in just 25-30 minutes, making it a conveniently quick meal for busy parents. But more importantly, its delicious flavors and filling ingredients make it an all-time favorite dish among toddlers and kids.
To make sandwiches for a small get-together, make the stuffing a day before. Cool and refrigerate it. Then you only need 5 minutes to put the stuffing on the bread and toast the sandwiches on rawa when you are ready to eat.

Storage Suggestion:
Sandwiches taste best when they are fresh crisp and hot. The bread is still crispy when the sandwich is hot. If you keep the sandwich too long, the bread will lose its crispiness because of the potato stuffing.
But that does not mean it doesn’t stay good. I prefer packing these sandwiches if we go for a one-day drive or the train journey. So if the weather is not too hot it will stay good and taste good.
But here is what you can do instead make the potato filling first. Put the filling in an airtight container. Store it in the fridge. You can keep the filling for 1-2 days in the fridge. And when you want a sandwich, take out the filling. Put it on bread. Toast the sandwich to make it crispy again and serve.
Pro Tips:
Boiling and Mashing: The potato should be perfectly boiled, mashed, and spreadable. To get that spreadable consistency, ensure that you are boiling and mashing the potatoes correctly. After the potato is boiled, let the pressure release from the cooker before you open it.
Once opened, drain the water immediately and peel the potatoes when they are slightly hot. Also, mash them with the masher and then with your hand right after you take them out of the pressure cooker.
If you leave the potatoes in the water longer, the potatoes will have a slimy texture. Also if you leave the potatoes after peeling them, thinking you will do it when you are ready to make the sandwiches, then you won’t be able to mash them properly and you will find chunks of potato in the mixture.
Stuffing: I love to be generous while stuffing, no matter what I am making. 🙂 Be it parathas or sandwiches. But that’s my personal choice. You can stuff as much as you want.
Butter: Make sure the butter is at room temperature so that it is easy to spread. Be generous with the butter when making the sandwiches. More butter keeps the bread crispy and adds a buttery taste. Also to make the potato sandwich vegan-friendly, replace the butter with oil.

Basic Ingredients Used to Make this Recipe:
Potatoes: You can use any variety of potatoes to make these sandwiches.
Vegetables: I love to add onions and tomatoes to my potato sandwiches. You can add more veggies like carrots, capsicum, or corn. Feel free to customize the recipe to your taste.
Bread: The sandwiches are made with white/sandwich bread but I will recommend using Multigrain bread, brown bread, or wheat bread to make it a little healthy. Don’t worry it tastes good, give it a try. You can even try making these sandwiches with my 100% Eggless Aata Bread.
Butter: I have used oil to make the aloo masala and butter to toast the bread. You can replace butter with ghee or oil if you want to. I you ask me about my choice then I love to use ghee then better as using ghee instead of butter is always a healthier choice.
Spices and Aromatics: I used mustard seeds, ginger, green chilies, red chili powder, and salt. You can add more spices like garam masala or chaat masala if you want.

Ingredients for stuffing:
- 3 Potato large
- 1 Onion large,chopped
- 1 Tomato finely chopped
- 2 Green chilli chopped
- 1 inch Ginger finely chopped
- Turmeric powder a pinch
- 1 tbsp Vegetable Oil
- 1/4 tsp Chilli powder
- 1/2 tsp Mustard seeds
- 2 tbsp Coriander leaves
- Salt as per taste
Ingredients for Sandwich:
- 8 Bread Slices
- Butter Softened, as needed
Instructions
Method:
- Heat oil and add mustard seeds to it.
- When mustard seeds splutters, add onions, turmeric powder, green chilli and ginger. Saute well.
- Now add chopped tomato and saute for a few more minutes. cover and cook for 3-4 min.
- Then add chilli powder, salt, mashed potatoes and coriander leaves. mix well.
- So the Aloo Masala is ready.
How to make Sandwich:
- Apply butter on 1 side of both the bread.
- Place a spoonful of stuffing on one bread and cover it with another bread with buttered side facing down.
- Grease tawa with butter and toast the sandwich from both the sides.
- If you want you can make it crispy as much as you require.
- Repeat the process for the rest of the breads.
