The eggless aata jaggery cake is a special kind of cake made with whole wheat flour which we call ‘aata’ in Hindi. It uses jaggery instead of white sugar, which is a natural sweetener made from sugarcane juice.

The addition of jaggery gives it a deep, earthy sweet taste with a lovely warm brown color.

To begin with, we first mix the wet ingredients – oil, curd (yogurt), milk, and jaggery powder. And then we add the dry ingredients like aata, baking soda, and baking powder. And then mix everything. And yes, we should not overmix after adding these dry ingredients.

The curd in the batter makes the cake very soft and moist inside when baked. The baking soda and powder make it rise and become light and fluffy.

Finally, top it up with some chopped almonds before baking. This gives a nice crunch and flavor on top.

Ingredients

  • 1/2 cup Oil
  • 1 cup Curd
  • 1/4 cup Milk
  • 1 cup Jaggery Powder
  • 1 1/2 cup Wheat Flour
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • Almonds for toppings

Instructions

  • In a bowl first add oil, curd, jaggery and milk. Mix well.

  • Now add dry ingredients like maida, baking soda, baking powder and mix well until well combined. Do not overmix.

  • Bake in pre-heated oven at 180 degree C for 55 min.
  • After baking, keep the cake on wire mesh atleast for an hour, until it gets cool down completely.
