She continued…

“Since you’re making this for the festive season, and the cake already has the red from the jam and the white from the sugar, adding a touch of green will make it look more festive.”

Thankfully, I had some leftover mint leaves from making paneer biryani the previous night. Placing a few mint leaves in the center not only elevated the cake’s appearance but also added a fresh, festive charm that was simply irresistible.

  • Mixed Fruit Jam as needed
  • Powdered Sugar as needed

Instructions

Cake Preparation:

  • In a bowl, add curd, sugar, vanilla essence, lemon juice, and water.
  • Mix well until the sugar dissolves completely and the mixture looks smooth.
  • Add baking soda to the wet ingredients and stir gently.
  • You’ll notice the mixture fizz as the lemon juice activates the baking soda, helping the cake rise.
  • Sift together all-purpose flour and baking powder directly into the wet mixture.
  • Fold the mixture gently using a spatula or whisk, ensuring there are no lumps. Be careful not to overmix.
  • Preheat your oven to 180°C (356°F) for 20 minutes.
